White or yellowish crystalline powder, odorless, almost odorless, slightly bitter. Slightly hygroscopic in air. At 130ºC, the crystal water is lost to form anhydrous substance, which decomposes above 170ºC. Dissolve in about 50ml25ºC water per g. At low temperature, it is more soluble in water, and the aqueous solution is alkaline. Insoluble in ethanol, soluble in glycerol. Citric acid or lactic acid can improve its solubility in water, but it is easy to decompose when heated. It is often used as calcium fortifying agent for food, for bread, flour, noodles, soy milk and so on. The dosage is less than 1%.
